All of them, according to what the main definition of AU seems to be nowadays, the different setting AU. I maintain that if you take a character out of their canon setting, they're not the same character. When you've consumed enough media in your life, you could take any character from any canon and think of how they could read as some other character from a different canon in an AU. But they're still not. Actual AU fanfics just feel the same as doing that.
