One of the main reasons I can't get into this game is how much it weirds me out that you can continue playing with characters that have canonically died already. I know gameplay and plot are different but that doesn't help, I still think it's super weird.

I generally think a significant number of character just up and dying on you is incredibly depressing and it would seriously mess up my enjoyment of the game and annoy me if I had pulled for those characters (let alone possibly spent money on them).

Hmm . . . Do you feel the same way about characters who aren’t canonically present in the place and time where you’re fighting? Or about using the playable versions of boss characters to fight those same bosses?

Yes, but not AS weird, which is why I can play Genshin. I wouldn't take Childe to his own boss fight though, for example.

To be fair, to date...only like...one character is actually dead. There jury's still out on one (but he's probably not actually gone). One of them already came back. And a whole big posse of them are only mostly dead too. So...

Hoyo has a bad habit of pulling the death card but not actually following through.

This. Only one character is actually dead for real. And the character you play isn't him, really.
