There's a wish fulfillment aspect to these movies -- the family member who's always been unfair to you realizes that they were wrong and tells you so! and changes how they treat you happily ever after. But, as you say, they also serve a purpose in highlighting these types of experiences and showing that this is a cycle that can be broken. Maybe in real life Abuela's never going to change, but that doesn't mean that it's not important to tell a story that explains how she got to where she is and that she can change.
