I know the original Lord of the Rings film trilogy is better quality wise, but I think I'd have more luck getting my wife to watch The Hobbit movies with me instead. She complained that the last time she tried to watch LOTR, it was "boring" and "confusing", and the Hobbit movies seem more simple and fast paced.

I love both sets of movies, but tbh if your girlfriend isn't interested in the movies maybe don't try to force her to watch them? It's fine if she doesn't care.

have you considered: Rankin/Bass animated hobbit

fun straightforward hobbit tale, but also, like, good

Eh, I don't know. They're simpler, but to me they're not even very good as popcorn flicks because the action sequences aren't that great and the bits inbetween the action sequences feel like an afterthought. Also the last one seemed to go on and on and on with major pacing issues.

Understandable
One of my friends finds the LOTR movies really boring, but he really enjoyed The Hobbit trilogy

We all can't have the same tastes, and that's OK.
