A shredded coleslaw mix, maybe? I'm not sure you can leave it out just because the amount of cabbage is so big. It also provides a lot of nutritional value.

You're welcome! Good luck and come back and tell us how the bean salad turned out! I've been curious about them myself because they sound like a filling but healthy meal.

DA I have been making them as my "depression meal prep" - for those days I get home and am not going to cook/eat properly so I have something "grab and go" prepped in the fridge - and I eat them with chips. Sometimes I mix in a sauce or hummus, sometimes not. Highly recommend!

I also bought a veggie chopper to easily dice the veggies I add in. It has been a game changer for me.
