Just bracing for this extreme weather, whatever it’s going to be. Today I drove to my dad’s to drop off a bunch of canned soups I made yesterday because last night on the phone I learned he didn’t really have anything but a loaf of bread and frozen dinners. I know he eats out a lot but didn’t realize he wasn’t prepared for this at all. If we get ice, I won’t be able to go to him so at least I can rest a little easier knowing he has something to eat. And he has a gas range so he’ll be ok on that front.

All that to say that tomorrow I’m making and canning a bunch of soup again. I’m also taking my dog hiking for two hours because we need the exercise and it will be a nice break from the kitchen, plus our last chance to be out in a sane climate for a while. I love the cold but my dog doesn’t and it’s going to be a challenge getting him out the door again starting Sunday LOL

Just some boring basic ones. Tomato, chicken noodle, zucchini, vegetable, and navy bean soups. I have three crockpots and two big soup pots so I make them all at the same time. When they’re all done, I should have enough veggie trash saved up that I can do a 5 qt batch of veggie stock, so I’ll do that tomorrow night in a crockpot and get it into soup cubes to freeze before the weather hits. Hopefully. I’ve lost track of the forecast tbh because it’s changed so much.
