What's for dinner?

It's cold and we got another inch of snow. Not a big deal compared to the 12" dump from earlier this winter but still puts me in the mood for warm weather food. So tonight, I cut up enough yellow potatoes, sweet potatoes, onions and carrots to fill a big sheet pan in a single layer, tossed with plenty of olive oil, salt, pepper and thyme. You can also use rosemary. Popped it in the oven at 425F for 25 minutes.

Then I pulled out the sheet pan and added two large chicken leg quarters (a nice cheap cut!) and a split chicken breast that had been rubbed in olive oil, salt, pepper and thyme, then popped it back into the oven for another 35 minutes. You can serve it with another vegetable but sometimes I just eat this as is.

Goulash, family recipe with like, four ingredients. Very simple, very plain, but I grew up with it so I'm fond of it.

Apple, sliced and dipped in peanut butter and cottage cheese. And a protein bar.

Idk if it is even really a depression thing, I'm just so exhausted at the end of the day lately and I haven't been meal prepping like I used to.

We've all been there, nonny. You did good, got some protein in and some fruit - that's way better than a lot of people.

Egg sandwich. I sliced a hard boiled egg and arranged the slices on some spinach on a piece of toast. Drizzle a little oil and sprinkle with pine nuts and pepitas. I used a second slice of toast for a closed sandwich but it makes and awesome open faced sandwich, too.

I ended up having shockingly good sesame chicken from this itty-bitty Chinese restaurant located in a gas station. I'd heard the place was good but never really had an opportunity to try it before now.
