I don't get why you'd need a general degree rather than cracking on with the medical one right from the off.

Because they are not going to invest medical highly specialized medical training to someone who might not be college material.

the general degree weeds out those who can't cut it. see also: law school.

If you can't hack 8am basic science classes, you'll never survive residency. You also, as I understand it, need a certain number of science and math credits to even get into medical programs, you don't skate in on Intro to Public Speaking and Underwater Basket-weaving. If you can't handle the science let alone the math, it's good to find out before you take out 120k/yr loans you'll never pay back.

Ideally and in theory, anyway. I've heard horror stories from university profs in my city shocked at the absolutely abysmal state of students today, I don't know if we're even going to have anyone smart enough to not AI their way through Biology 101 in order to be a smart doctor in 8 years.

Because not everyone goes into college knowing right off the bat that they want to go into the medical field. It's not at all uncommon for people to take some biology courses or other related courses and discover that they are interested in medicine through that.
