My favorite canon crossover is the Musou universe - it began with Koei's two video games, Dynasty Warriors and Samurai Warriors, and it was extremely well-done. And then they went "wait, we also put out all these other games, what if we combined all of them?" But it stopped before including One Piece Musou, Hyrule Musou, and a few others. I want all of them. I want Luffy fighting alongside Guan Yu and Link joining Sanada Yukimura. I want all of it!
