I've seen this movie several times and it always went in one ear, out the other for me. I don't get the hype either. And I grew up an Andre the Giant fan.
Also I have a visceral dislike of Carey Elwes. When people hear this I always hear "But he was Wes!!!" and my answer was always "...so?"

I think that's why it's held its appeal for a lot of people, along with the incredible ensemble cast you mention and a horde of quotable lines that made it a pop culture phenomenon before memes existed.
And nobody got slapped. JFC.
