There are fantastic Spock Uhura fics out there
SalR (http://community.livejournal.com/spock_uhura/tag/.author:+salr323) and the brilliant Yahtzee (http://community.livejournal.com/spock_uhura/tag/.author:+yahtzee63) are two examples.
Yes, I post there too, but am not going to comment on the quality of my own work.
I don't read baby fics, but I suppose that if the authors are writing them its because people like them.

If you think Spock is OOC in most fanfic, try the modest StarTrekWriter's fic. She makes him ALIEN, LOGICAL, and still sexy as all hell. She also writes good plotty fic.
TeaOli has written a wonderful series of stories that take place after the movie.
Go to Spock_Uhura "Recommendations" posts; posted every week. There is also an first annual fanfic awards post up that will give you lots of great stories to pick from.
