Bones REALLY fits into that, outside the Gormagon arc, except, even THEN they'd have episodes that wouldn't focus on that whole thing. The Gravedigger arc was REALLY good about that. She showed up just enough to make sure the audience didn't forget about her up until she finally bit the bullet (almost literally).
But once again, that's assuming you like crime drama.
House was like that at first, but I wouldn't honestly recommend it past season 4.
Doctor Who is good for that. I don't watch the other stuff other people have mentioned, but shows like that ARE out there.
Or hell, go for something as cute and sweet as My Little Pony: Friendship is Magic. That's about as episodic as you can get.
