I think the person meant, you know, in the vast majority of anime/mangs (read: almost anything which is not some sort of shoujo romance) there might be the good-looking lead guy(s), a load of average-looking guys as friends/classmates/coworkers, a couple of ugly nerds, the dorky-glasses-guy who is actually likable, adult men of various ages and weights, the big gorilla-like guy, random Freddie Mercury, possibly a barely-humanoid robot, a yakuza guy, a yankee, an enormous muscular boxer, a sumo wrestler, etc.

The females? Come in very specific types: cute girl, hot girl (she is taller, has big boobs, usually dresses skanky), hot sensei/MILF/etc, and lastly as either the middle-aged mother or old lady (but only when these characters are relevant to the plot of course). You can say, "But there's the green-haired catgirl and the robot loli and the genki sports girl!!!" but really, all the girls are more or less the same in terms of height and build and if you swapped their hair and eyes, it's likely that a lot of people wouldn't even notice. Ditto with the MILF/sensei group, and don't all plain middle-aged or old ladies serving tea to their boys generally just look forgettable?

If you swapped the clothes and facial features of, say, a huge muscular dude and a creepy nerd, people would definitely notice. Because their bodies are drawn so utterly differently. The posture is different, the limb ratios, everything. It's not just "oh well this one has red hair, that means she's spunky!!" The character designs for girls are repeated over and over and over. Apparently one's only escape from being hot/cute is to grow old or be a gigantic bitch/nerd (but hell, half the time even the "bad" girl or the "nerd" could swap hair and faces with the heroine and not really look much different). I think the poster just wants to see the same variety in female characters as exists for guys, and isn't saying "ALL MOE NEEDS TO BE BURNED" or "EVERYTHING SHOULD BE A BISHIE" or whatever.

Lastly I want to clarify that for myself, I agree with this sentiment, but I mean this only in regard to artists who routinely create a wide variety of men and only "standard" females. I mean, you can't harsh on most shoujo mangaka in Ribon for drawing boys who look like girls or whatever, because a lot of times that is all they draw or all they CAN draw. It's not like they're choosing to draw only their women all the same; all their guys are more or less the same too. XD

One manga in which I think I've seen lots of variety in humanity is one piece; of course the main cast is mostly good-looking (well, this is fantasy, and who makes up a fantasy where you WANT ugly people to identify with as the main characters?) but the villains and random townspeople and such come in all sizes, ages, weights and types, men and women alike. I love the art and world of OP, and I wish I hadn't had to stop reading it because it will NEVER END.

Also I have to note to the OP that on the whole it's a losing battle to expect and dating sim or moe girl series to ever show much variety. There's not actually a huge variety in what (average, non-fetishy) men like, so there's a similarly small range of looks for those girls. They HAVE to be skinny and delicate and have long legs and perky boobs and flawless skin and be within a certain height range and so on. Since the stuff is aimed at guys, of COURSE it will give them what they want. If the range for potential male leads in female-oriented is any wider, it's only because girls generally have a wider range of what they'll find attractive in terms of body types and ages, so you might wind up with greater visual diversity when pandering to them--but it's not really because of sexist creators. XD
