I wish Fleur looked more ethereal, personally. I mean, I know they pretty much skipped over the whole part-veela thing, but I want to see that edge of non-human beauty in her, that glamour.

this, exactly. The second part, I mean - it's not that I think she's not BEAUTIFUL enough, but I pictured her looking magical~ in her beauty, like..almost uncannily so. (This is making it sound creepy-doll-like but I'm really just trying to find another way of saying ethereal and coming up short)

Hit the nail on the head - it's not that she isn't beautiful, but that her beauty isn't other. Kind of off from how I think Rowling intended to portray her...but then again movie =/= book, etc.
