And we should also talk about how--with rare exceptions--canon gay couples don't get as much attention as slash pairings composed of at least one "straight" person.

Is this really true of canon gay couples in shows (movies, books, etc) that are otherwise appealing to fandom? It's true that, say, the gay couple in Six Feet Under didn't/doesn't get talked about much in fandom, but that's because ~serious HBO dramas about family~ just don't draw big fandoms. But for instance Kurt/Blaine (on a show about misfits and musicals) and Jack/Ianto (on a sci-fi show) are hugely popular. And lots of people got excited about Renly/Loras being made canon in GoT. And Queer as Folk was pretty popular, and Brokeback Mountain...

I can't think of any examples of stories that were big in fandom and had a canon gay couple where the canon gay couples WASN'T talked about a lot, though I guess maybe I just don't know (because they're not talked about...)?

I wouldn't say it's true in all cases, no. But these rare exceptions are things like Kurt/Blaine, as Kurt was a fandom darling long before Blaine showed up. I've never counted the numbers, but shipper-wise, I wouldn't be surprised if Kurt/Finn was still bigger as a fandom couple (or Kurt/whoever--I can't keep track.)

I actually mentioned this somewhere above, too, but your examples kind of bring it more into the light: the canon gay couples present now fill a niche, and aren't quite the same as gay couples intended for mainstream audiences. Glee is about highschool, and I don't need to mention that it was a confusing time for many people: people who are homophobic can easily say it's "just a phase." Jack is an immortal time traveler, not normal by any means, and Ianto died: that gay couple was easily eliminated. Queer as Folk was about the gay community and problems associated with it and its fellows, and Brokeback Mountain was entirely about a gay couple that met with tragedy and married other people. It's not exactly a shining history of positive gay couples, know what I mean? I have my doubts that attempting to put a gay couple in a standard blockbuster movie would go over nearly as well.

A blockbuster movie? Maybe not quite yet (at least, not like a blockbuster action flick. I could see it working in a romcom, maybe). But as people mentioned above, it's happening more on more on pretty mainstream TV (according to some study, Modern Family is actually one of the more watched shows by republicans). Obviously there is still a long way to go, but amount of representation is definitely getting better.
