While I don't think the things that happen in the show can be considered canon for ships by themselves, there are certainly hints enough as to what might happen when the kids grow up, which is where most of the fanworks I read/enjoy come from. I haven't read a fic where they are the age they are in the show and people are shipping them.

So if that's what you're saying, OP, I'd have to agree with you. Cartman, as he is in the show, isn't gay, because I don't think you understand your sexuality when you're that young. But who is to say he might not settle into his sexuality when he's older? That's up for interpretation.
