how do you not know you're holding your breath, anyway

surely you'd realize when you started to collapse on the floor while suffocating

I think you'd have to be holding it for a pretty long time in order to start suffocating. I've held my breath without noticing before. It's not impossible.

but if you didn't notice you were holding it then you wouldn't know to release the breath you were holding to take another breath

You realize it and exhale. Or you exhale and go, "Whoa, shit, I didn't realize I'd been holding my breath for so long." Really. Trust me. This happens to lots of people.

i took it to mean OH WOW LOL I DIDN'T KNOW I WAS HOLDING THAT BREATH AT ALL instead of "shit where did my time go while that breath was being contained"

You release it unconsciously too. It's happened to me too. You can't unconsciously suffocate yourself (I've heard of children intentionally passing out by not breathing, but you can't consciously suffocate yourself either.)

Interesting. Very quickly (like a second) after I start holding my breath, I become aware of it through a closed-off kind of feeling in the back of my throat. It's noticeable enough that I don't think I could be too distracted by anything else to realize.

Breathing happens to be under both autonomic and voluntary control. You don't have to think about breathing at all, and most of the time you don't, and your body adjusts the rate and volume of your respirations without you even noticing. But once you start thinking about it, of course you notice, and you can override your automatic reactions and make yourself hold a breath, or in this case, "release a breath you didn't know you were holding."

Sometimes people take a deep breath and hold it as a kind of startle reaction. Of course, eventually they will gasp and breath again whether they notice it or not, and the discomfort of not breathing will make you notice it eventually. But you kind of have to have an automatic breath-holding reaction as a defense against suddenly falling into water, to keep yourself from drowning-- and this reaction can sometimes pop up in people at other times, when people are suddenly startled or afraid or moved or something.

I don't think this happens to everyone. Maybe not even to most people. But it's pretty memorable and if it had happened to you, you'd probably know.
