But I do agree that it's unlikely any readers would have wanted to see the epilogue where the main characters aren't with the people they were with in the main part of the stories, no matter how realistic. I always thought Harry and Ginny were the most cliched, trite thing, but I'd have been thrown if he'd ended up with Miss Random. And even if he'd ended up with someone I wanted from the canon, like say Luna, I'd still be like "BUT HOW DID THIS HAPPEN!??!?!"
However, all in all, I find the epilogue was poorly done and there's really very little she could have done to make it worse. It didn't really answer questions and it left me feeling like leaving off at the end of the last chapter and getting rid of the epilogue would have been better.
