I think hookerfic has become a weird new version of the blushing virgin trope. The blushing virgin has obviously never had sex, so everything is new and exciting and overwhelming. The hooker version of that is the hooker has had lots of sex, causing sex to become mundane or boring for them, something they equate with work. Then in swoops another character who is a highly skilled lover, and makes the hooker feel like a virgin, because they're just that good.
