The few fandoms I've found that had lots of men in them who were shipping and writing fic all had lots of female characters, who were strongly characterized and had lots of interaction. Definite Bechdel passers, like Sailor Moon, Marimite, and MLP:FiM. Also things like Mass Effect, where the female protagonist is appealing to a lot of dudes because her voice actor puts on a superb performance, but they don't want to have to romance a man. So they choose to have her romance one of the female crew members, and the men I know who enjoy the game get really, really heavily invested in the the relationship.
Whereas the canons of most media period are very male-dominated, and tend to either have a single token female, or a couple of them who never seem to interact much unless it's about the dudes. Not very much shipping material there. If anything, this is a similarity between men and women rather than a difference, because I wouldn't be very interested in shipping the few token men in Marimite or BSSM, either. Unfortunately, such canons are rare. I've seen some guys ship a series by gender-swapping the entire cast, so that the characters who get interaction and screen time are all female.
