I thought it was because he didn't want to die without having the chance to make up for the ways he'd hurt people. Because even before knowing he was going to die, he'd gotten to "know" and care about them and realized how wrong he'd been.

That was my interpretation too.

IA, I felt like he had started to care for everyone again, and seeing his grave made him realize his own mortality, and realize that he had a chance to help those he cared about, but he was also only human, and he might die before he had a chance to make things right.

This.

He WAS a crotchety old man in the 1830s-ish- maybe he'd have fifteen years on the outside, but as he was an old man who didn't like to light a candle when navigating stairs in the dark or heat his living spaces, I don't think he would have made even that at the rate he was going.

Precisely! He would have likely died soon, and he wanted the chance to fix things before he did, and there is no shame in that.

Exactly this.

He had begin to change with the first ghost, and had a lot of change by the end of the second (by that point he's already begging for Tiny Tim to be okay). However, the third ghost is that one that shows him the change must be immediate.

If someone were morbidly obese, they might be convinced by x, y, and z that they should lose weight, but if they learned they were going to die in three years, that the thing that would make them start now, rather than putting it off or taking their time.

Exactly! He had his mortality right in his face, and he knew he had to fix things. ♥
