I usually attribute the ease of reading The Silmarillion to the fact that, to me, it has a similar feel to reading the Bible. It reminds me of times when I'd go read Genesis, which frankly has some great stories in it (though I admit I tended to skip all the 'begat's).

Even The Hobbit wasn't as easy a read as the Silm, and it's suposed to be a children's story.

It also easy to view the Silm as basically the LotR Bible. It's all the stories of ancient history - what the Valar did, what the elves did, cataclysmic ancient battles thousands of years ago. What's the Bible? What God did, what humans did, cataclysmic battles and events thousands of years ago.
