According to my grandmother, lutefisk is oily cardboard with a strong flavor of fish. But she was third-generation-back Norwegian and loved the stuff anyway when she could get it.

It's dried cod soaked in lye to reconstitute it, then washed to hopefully get enough of the lye out of it that it doesn't kill you. It's nasty and gelatinous and yet somehow still impossible to chew. It's like eating a bitter condom, kinda.

I always thought they were trying to dispose of the fish's body, but then changed their mind at the last minute and decided to call it a snack.

Easiest way to describe it? Fish Jell-O. And it will stain your silver like you wouldn't believe. Nasty, awful stuff. My in-laws serve it every Christmas with fruit soup.
