Sansa doesn't need Sandor's dialogues in order to establish that her character is getting her dreams shat on. Her Father was beheaded in front of her and she's getting smacked around by Joffrey. She's learning the things that Sandor tells her in the books, regardless of whether he talks to her on the TV show. Her character develops nonetheless.

Speeding up Littlefinger's revelation as a incredibly devious scheming bastard who's causing untold levels of disturbance in everything for the Shakespearean "Sport and Profit" of it all, is more important to a TV audience, because they're going to want that character established more quickly.

More is gained from Sandor telling Sansa his story than Littlefinger. That's why GRRM intended it that way. The audience already knows who Littlefinger is, more than enough.

Exactly. Of all characters, Littlefinger is the last that we need to see more of.

GRRM has the luxury of dragging shit out for pages at a time and focusing on random bits of exposition.

D&D do not because they have to condense everything for television.

Sandor/Sansa is far less significant a relationship in the greater scheme of things than Littlefinger/Sansa.

SanSan fans can argue against that til they're blue in the face, it doesn't change anything.
