I never was a huge Star Wars fan, so I'm probably not the people you're talking about, but: the effects are dated, and Lucas isn't a terribly good director - he needs to stick to writing and producing, and let other people take the director's chair. (IMHO, this is why Empire is such a strong film; he didn't direct that one, or Return.) Other than that, there's nothing wrong with the original trilogy. Sure, there are a lot of character roads not taken, but the films aren't really about character arc and development for anyone other than Luke. They're about big, sprawling space opera ideas, and they work perfectly well as space opera stories.

There's also a certain amount of the Hamlet-is-full-of-cliches problem here - the original trilogy has been referenced and quoted in so many other things, it's hard to remember on rewatch that it founded a lot of the current movie tropes, or at least introduced them to the modern US movie audience.
