The other commenters are absolutely correct about Shakespeare writing for the masses and not being sacred to begin with, not to mention that most of his plots weren't original -- I suspect fanfic is something Shakespeare would, if not explicitly approve of, at least be totally cool with.

Not to mention that, um, Hal/Poins is totally a thing in the text. You can ship them because they're Tom Hiddleston and another hot dude eyefucking in a sauna, that is a perfectly good reason, but also! stuff that is readable from the text! I can't point things out that coherently, because I've only ever talked about it in a Shakespeare class now murky in my memory, but the whole series of plays that make up The Hollow Crown are about, among other things, having good and bad councilors -- good councilors tell the king important things the king needs to hear, and bad councilors are flatterers and hangers-on, with the strong implication that the king keeps them around to sleep with. So the fact that everyone in court is uneasy about the company Hal keeps, and the fact that Falstaff actually sends Hal a letter telling him what bad council Poins is, can absolutely be read as an implication of Hal/Poins. Which it isn't necessarily! But it's a perfectly valid reading.

...aaand that was probably a lot more than the OP cared about hearing! I JUST HAVE A LOT OF HISTORY PLAY FEELINGS.

I cared! I like Shakespeare but I never studied any of his history plays so this comment (and the TV adaptation itself) are super interesting to me.

I read a theory that Poins might be Hal's illegitimate brother, which I could see, but am obviously delighted there's a shippy alternative ;)

You might be interested to know that "Poins is Hal's brother" is a crackpot theory held by this one guy on the internet. But many Shakespeare scholars, as well as fans, see textual evidence that implies a sexual relationship between Hal and Poins. So shipping works from all angles! (I would love to see more Hal/Poins fic, too.)

Well that is interesting. I never thought I'd be asking for academic papers at fandom!secrets (even ones about fictional dudes maybe having sex), but if you have links I'd love to read some.

I never thought I'd be asking for academic papers at fandom!secrets
: ) Fandom!secrets is a great place to bring together different kinds of nerdiness!

I'm the commenter above. While I'm not actually a Shakespeare expert, I have several friends (on LJ and in real life) with PhD's in Renaissance literature, and they all say that Hal/Poins is basically canon. Looking back to my college years, I remember that this book was the first time I read an academic discussion of Hal/Poins: http://www.goodreads.com/book/show/732585.Sodometries

But be warned--the main focus in this book (and most other academic discussions of Hal's implicit m/m relationships) is Hal/Falstaff, with Hal/Poins just as a side-discussion. But, obviously, Hal/Falstaff is not most people's idea of a sexy pairing for fic purposes...

This is one of the reasons why I love studying Shakespeare. So many readings are actually possible IN THE TEXT. ♥
