I've always done very well in interviews (I've only not gotten a formal job offer once, and in that case, the person I lost it to was already in the position and was simply looking to transfer to a different office), so I'm trying to think of things that I do. It's difficult, because I'm always well-prepared (e.g. I consider and research the sorts of questions I'm likely to be asked for a given position and practice before the big day), and yet I've never had that criticism.

One thing that I can say I've consistently done is that I've paused to consider before answering a question that required a "story." In other words, if I'm asked to describe an instance where I've demonstrated a particular skill, I'll actually visibly cycle through my memory before I answer. I've even, in a couple of cases, said "may I have a moment to think about that?" Hell, I actually once gave an example that the interviewers (there were two of them) didn't like, so they asked me for another one (which I gave, of course) -- and I got the call offering me the job less than an hour later. I also have no trouble describing some of my weaknesses and trouble areas. I just keep it fairly innocuous ("I'm working on my confidence" is good; "I have punctuality issues" is not. Not that I actually have punctuality issues, but you get the point).

As strange as it might sound, I think that the key to projecting a sense that you're more "human" is just allowing yourself to seem a little flawed. Perfection, in theory, is great. But in practice, it often seems contrived.
