You mean after your orgasm? If you're emotive enough, they should know because of whatever noise and movements you might make, and because most people tense up and then go limp for a while after orgasming. If you have super-quiet subtle orgasms, though, you can just say "okay, okay, that was amazing, I'm done" if s/he's, like, eating you out or fingering you or something (I assume that's what you mean).

If you're talking about having sex with someone and you finish before him/her, I guess that could be a little awkward if you get really painfully sensitive afterwards and can't just lie back and let them keep going until they've finished too, but again you can just say "ow, stop, it hurts" or whatever and quickly offer to finish them off instead after you guys pull apart, so there's no awkward silence where they're left hanging.
