If it's oral sex, I touch his head to let him know to stop. I could never figure out if this one guy was just really into it and didn't notice, or what, but touching his head worked. If you're already touching it, maybe tapping or pulling (gently) upwards would work. With intercourse, most guys I've been with could tell.
