I love the idea of fantasy fiction, but.... other than the two series you just said, all of it that I've ever read is complete and utter crap. It bums me out because I'd just really like to find some fantasy novels that are really imaginative with the worlds and whatnot, but it just isn't to be had, really.

If you think it "isn't to be had," you're simply not looking. Mercedes Lackey. Jim Butcher. Hell, even Anne McCaffrey. Marion Zimmer Bradley. Elizabeth Haydon. There are plenty of authors who come up with amazing world-building, complex plots, and fully-realized characters.

I don't know what you've been reading, but to say that all of fantasy other than two series is "complete and utter crap" is absurd.
