AFAIK they turn you away a ton of times just to make sure you're serious about converting. But that could have been a conservative and not an orthodox person who told me that.

No, you're right. They do turn you away at first, but anybody who's serious about it can convert (it's just a long process, because there's a shit-ton to learn).

According to an Orthodox friend of mine, that's right. The reason being, as she explained it, that Gentiles can still lead lives which are pleasing to God if they behave ethically, but that if you become a religious Jew you would then be bound by the requirement to keep Kosher, observe the Sabbath, etc, in order to please God, so you have to prove that you're serious about what it entails.
