I think it's because I don't think about religion too much myself unless I'm surrounded by extremely religious people, and usually I don't think of religion or God in a positive way. Forcing me to think about religion too much just makes me fall into days of confusion and anxiety and existential despair so I think I assume that fictional characters block religion out of their minds as well because I find it highly distracting to think about it too much to say the least.

With me I think it's because most people I meet (offline at least) have no interest in religion unless they make it really obvious. I was really surprised to find out one woman I know at work is a devout Catholic because I'd been to her house and she'd never mentioned it.
