I actually like to think that Link has to grow up real quickly during his quest as a kid (which really isn't fair to him, not at all) and that even though he sleeps for 7 years in the Chamber of Sages... his mind grows up anyway. So he's not an 11 year-old in the body of an 18 year-old when he continues his quest in the future.

That way, I feel more sad for him when he's sent back in time at the end to fix the timelines and he's basically 18 years old mentally with what could easily shape into some pretty horrible PTSD in an 11 year-old body... and everyone around him has no idea what he's been through and all the things that happened... except the Sages who can no longer return to their mortal lives, despite time reversing.

... There's so much terrible things going on in the OoT, but I still love that game so much.
