Considering how the original (and I mean original) fandom freaked out about Sherlock Holmes? My bet would be on immortal!Doyle going "oh not this shit again" and hoping the new fandoms kill one another off.

Oh god, this. Considering, from what I understand, they literally lined up around the places printing the 'comeback' of Sherlock [not selling it, just printing], and wrote fanfic, and generally pestered Doyle to bring Sherlock back, I'm betting he would just Rage!quit the internet/modern media in general.

Immortal!Doyle would so be be using those royalties to buy all the drinks every time the Holmes fandoms would turn to him and say, "Which of us do you think is the better one? WELL? You gotta pick a side!"

I'd be okay with this. At least this alternate universe version of Doyle spends his time and money on living large and douchebaggy, rather than spending it on spirit mediums and alienating his friends and being sad.

An angry Doyle is presumably happier.
