Oh man, I'm in your boat. I tried making this recently but I had to substitute a few ingredients so I don't think it came out quite right. Still, it tasted /close/ to what it should be, to me, so I'm pretty sure if I followed the recipe exactly it would have been amazing. *_*

I'm not sure how to go about spicing it up, though.

As for freezing it, you can definitely definitely do so, even the rice! I portioned mine out into tupperware, threw it in the freezer, and on days I was too lazy to cook it was a lifesaver.
