Oh my goodness OP I get you. So much. Finding Nemo did nothing for me (I posted a secret about it a while back) and from Ratatouille onwards, I've felt the movies lacked a certain...magic they used to have for me, even though I still enjoyed them overall. (Though I usually blame that on being older and way pickier about what I like.) All through Wall-E and Up! I missed the fun buddy interactions and by the time Toy Story 3 rolled out I was muttering through my adolescent tears, "Stop blatantly manipulating my emotions, damnit!"
