I think the crux of the problem is not what you're saying or your ideas behind them, merely how you define the term "canon" versus how the majority defines it, or at least the majority on F!S. You define canon a bit differently and include what I would term fanon into it.
I don't think you would piss anyone off if you're making off-hand comments or jokes and I don't think in light conversations you would either. I think, however, if you get into an in depth discussion with someone it might be in your best interest to define how you use the term canon and fanon.
However, if you're nice about it I don't think you would piss anyone off or be the "bad guy" anyway. I will just roll my eyes at people who deem things canon according to my definition and leave it be. It doesn't bother me too much. It's not really hurting me and they're not bothering me so it doesn't really matter. I am only bothered when these people insisting it's canon try to police other fans and how they interpret the story. Something I have come across a time or two to the point where the group that aggressively promotes their ship as canon has almost become synonymous with the group that hounds other fans into seeing things their way. That's when I have a problem because it's ruining my fun, which is what fandom is about to me.
I don't think you're that aggressive type. I've seen you around F!S, we've talked, and you've always been very civil and nice. So I don't think you'll have too much of a problem or be considered the 'bag guy'.
So yeah, as long as you clarify yourself when needed I don't think you'd ever really have a problem.
