I loke the Hetalia kink meme just because it's so massive and there's a wide variety of prompts. It's been slowing down though, so I'm a bit concerned.

I also have high hopes for the Red vs Blue kink meme, but I can't actually look at it because I'm not caught up yet and have already seen three pretty major spoilers - two of them on the kink meme.

As for what fandoms I wish had a kink meme?...every single one of them. Sigh.
