I actually...don't understand this at all. If there's absolutely no hope for your OTP to become canon, why would you ever want to destroy the pleasure of people who ship a conflicting canon couples by breaking them up and ruining the ship for a whole lot of other fans

maybe you already answered you own question here or maybe some slash fans are just a bit insecure and they think that if the writers don't destroy the canon couple people won't take their fanon slash couple seriously. It's not like we ever got a valid canon alternative to slash for those characters, so it even make sense if you think about it that fans may be scared that the het pair will get more popular.
Though, I don't think that some fans (possibly the majority of trek fans that worship the K/S friendship) will take slash seriously anyway, regardless if S/U or any other couple is made or break up.
