Like the anon above me said, ask them. If you're already on a date, it's unlikely they'd be weirded out to find out you want to hold hands/cuddle/whatever, and it avoids the awkward "do I signal? Are they getting it? What should I do?" part.

I haven't been on a date as such in a while, but I've been a couple of parties lately where I was hitting it off with someone there, and at a lull in the conversation just went "I kind of want to kiss you now, is that okay?" and in both cases it worked, and wasn't at all awkward. So I recommend the direct approach.

So in your particular case, in the car I would say "is it cool if I hug you now?" and if yes, voila! If the answer is no, he'd probably give at least some explanation, and you can find out what he is and isn't comfortable with.
