Because people never act like assholes when someone breaks up with them, right? There are countless cases of both men and women turning into asshats after a breakup, so i don't see whats wrong with someone acting this way in a fanfiction, at least as long it's not someone known for trashinbg women in their fics for apparantly no reason at all. Someone breaks up with them? Counts as reason for me.

I think you can have a character act realistically assholish without going into character-bashing territory, though.

You can try, but sometimes you'll run afoul of the people who think that portraying the character negatively in any way at all is bashing. Happened to me once.

Yes, this is true.

Ah well, you'll never be able to please everyone.

It stops being realistic when that's the default reaction for the woman that's in the way of slash. Not every single character would/should react like that, and it emphasises the fact that the writer's just getting her out of the way in as hurtful a way as possible so that male character A can find solace in male character B's dick.

The problem here, though, isn't that the character acts like an asshole after the break-up; it's that the character randomly starts acting like an asshole and that's what causes the break-up.
