I'm guessing G is for Gwyneth and P is for Paltrow, and the two Os are probably some disdainful nickname for her.

Goop is Gwyneth Paltrow. It's not a malicious nickname tho, it's the name of her own website.

In the first movie, when she was taking out the arc reactor from Tony's chest, she was whining about the 'goop'. At least, that's what I'm thinking.

Because, you know, pus or goop or electrostatic discharge and whining while sticking your hand in someone's chest is a reason to despise a character.
