I don't hate the "I'm gay for you!" thing so much since they could be a one on the Kinsey scale and not know it. It's usually badly written when it is like that though, so I do avoid it usually...

But yeah, about the whole past relationship thing, I can't read slash fic that does that to their opposite-sex love interests.

Yeah, I feel the same. I know people who suddenly fell in love with someone of the same gender after a life of straightness, who don't describe it as "I just didn't know I was gay."

If it can exist in real life, it can exist in fiction.

I mean, I also do think people can write things that way just for convenience. I'm not saying that isn't annoying. I just side-eye people acting like that doesn't happen because um, it does, sometimes.
