No. You could HAVE done better. You couldn't OF done anything, because that's not how the English language works.
(Yes, I know languages evolve. Doesn't mean I have to like it.)

I do this. I hope that it never makes it through to my written work, because I do know the difference (honest!), but I say it all the time.

Think "could've" like short for "could have" instead of "could of?" Maybe it will help?

I say "could have" but often my accent is heard as "could of". Same goes for pacific and specific.

It's not that you're pronouncing it 'could of', it's that you're pronouncing the perfectly legitimate contraction 'could've'.

That's not "language evolving." That's language developing bizarre and maladaptive mutations. "Could of" is the linguistic equivalent of a frog with three legs.
