Okay, I'll admit firsthand I'm a bit biased because I love both the books and the movies, but I don't think they should be that difficult to get through if you actually want to watch them. If you have a few hours of free time or a lazy weekend off you should be able to finish at least one of the films in a day. You could even watch one every week if you don't want to do so all at once. (And on the flip-side, if you don't mind watching them all at once it's very possible to marathon them in a day too.)

While LOTR does contain many characters, I don't think it should be hard for you to keep them separate; they're all pretty distinct imo. And the story is simple and easy to follow, so no worries about that.

Still, if you don't want to watch them, don't. I wouldn't keep lying about it though...even if it'll be a bit awkward to tell the truth.
