If you haven't...I dunno, I started with What Kind of Day Has It Been/In the Shadow of Two Gunmen I & II and fell irrevocably in love forever, but they're very intense episodes.
If you'd like something light and non-spoilery, for the most entertaining/clever/unpreachy ones, and avoiding the emotionally gutwrenching and emotionally exhausting ones in light of your sleep, you can't beat Celestial Navigation or Five Votes Down from season 1; Galileo, In This White House, or And It's Surely To Their Credit from season 2.
If you'd like really intense or spoilery episodes...well, tell me and I'll rec you a list of my faves.

Also Inauguration I & II, Commencement/25, and the string of episodes from 17 people and Two Cathedrals, but I dunno if you want to see those right before going to sleep. The subject material of Inauguration upset me so badly...

"Somebody's Going to Emergency, Somebody's Going to Jail" because of Toby's scenes at the WTO protest.
Also Agent Mike Casper's first episode, hellooooo, younger!Clark Gregg."Bartlet for America" for the chemistry between Leo and Jordan Kendall, and the call back to "A man falls into a hole..."
I'm also a fan of all the episodes surrounding Zoe's kidnapping, but I enjoy angst.
I know fandom's kind of meh on it, but I kind of like "Access" too, because of the CJ insight we get.
