Though in many cases the characters are all male because we're still getting over the idea that a female can be the main character. Not just because females may be weaker than men (as someone mentioned before) but because the idea of seeing a woman getting beat up is distressing to a lot of people.

Look how many games only have disposable male NPCS. A lot of games also don't have children for this reason and I believe the ones in Skyrim are invincible.

Straight white males getting hurt doesn't bother people as much as literally any other race/sex/orientation does.

The times are changing though. I think games like Saints Row and Bioshock have shown we're not as squeamish about hitting women or potentially killing children. (Uh that may not be a good thing?)
