Nth-ing start with the original trilogy, without the "special edition" remastering if you can. But the special editions aren't inherently *horrible*. I got into Star Wars myself by way of the special edition theatrical releases. To the point where I had a Star Wars themed Bat Mitzvah.

Once you've watched those, it depends on where you want to go. I'm an old-school EU fan myself, so I love the Zahn books and accept at least broad strokes canon of everything from A New Hope through the first couple books of NJO. Of the EU novels, I recommend anything by Zahn plus the X-wing books. I have a soft spot in my heart for the other old-school novels, since teenage me *adored* them, but I'll admit that most of them are actually pretty terrible in retrospect.

I'm not a huge fan of the prequel era, so I haven't watched or read most of the stuff set then. I do recommend at least watching episodes 1-3 once to know what's going on there, but the main reason I'd suggest it is so that you have a background for watching the Clone Wars cartoon, which I've heard is fantastic. I haven't watched it, but it does look interesting and well done.

My own experience as a Star Wars fan consisted of getting hooked on the original trilogy, devouring most of the EU novels available up through when the prequels came out, kind of souring on the movies then, and then mostly giving up on the official canon as New Jedi Order got darker and darker. But the Galaxy Far, Far Away in my head? Still one of my favorite fictional places ever.
