Yeah, I agree that they don't have as much canon interaction other characters and I know everybody isn't going to have a deep meaningful scene together. But the fandom is vast and creative and loves expanding on small details.
I know, I should just write something myself and I might but it probably won't be good.
http://archiveofourown.org/works/305459 is a pretty good fic, though it's Jade/Kanaya/Rose.
