It's because of marketing and because the default face, i.e the canon male Shepard, goes hand in hand with all the cliches. When it comes to appearance I mean. Sure you can customize but they are still pushing this image as the "right one". Heck, they pretty much ignored fem!Sphepard in their earlier marketing too.
